If a service interceptor is no longer needed or you want to remove it from the ArcGIS Server environment, you can use the unregister operation. Follow the steps below to unregister interceptor from ArcGIS Server.

Navigate to https://<domainname>:6443/arcgis/admin/system/interceptors.

Click unregister.

Enter the service interceptor file name and click Unregister.
This step removes the service interceptor from ArcGIS Server. You can re-register the same interceptor file again if needed.
